Roasted Tomatillo and Lime Salsa

This is a great salsa recipe for Cinco de Mayo! Enjoy!

8 ounces small tomatillos (about 8), husked, rinsed
1 large jalapeño chile, stemmed
10 large fresh mint leaves
2 tablespoons fresh lime juice
1/4 cup finely chopped white onion

Preheat broiler. Line baking sheet with aluminum foil. Arrange tomatillos and jalapeño chile on prepared baking sheet. Broil until tomatillos and jalapeño chile are soft and blackened in spots, about 5 minutes per side. Cool; transfer tomatillos, jalapeño chile, and any juices on baking sheet to blender. Add fresh mint and lime juice; blend to coarse puree. Transfer mixture to bowl; mix in chopped onion. Season salsa with salt.

This only makes a cup so you may want to double or triple this one!

Mint Julep Pineapple

2 tablespoons bourbon or blended whiskey
1/4 cup finely chopped fresh mint plus 2 tablespoons whole small fresh mint leaves
1 tablespoon sugar
1 medium pineapple (2 lb; labeled "extra sweet")

Stir together bourbon, chopped mint, and sugar in a small bowl. Let stand 20 minutes (to allow flavors to develop).

Meanwhile, trim, peel, quarter, and core pineapple, then cut crosswise into 1/8-inch-thick slices and transfer to a bowl. Pour bourbon mixture through a sieve onto pineapple. Add whole mint leaves and gently toss to combine.

Mint Tea Infusion

1 teaspoon dried mint (or 1 tablespoon crushed fresh mint leaves)
1 cup boiling water

Put mint leaves in an infuser & then place it inside a cup. Add boiling water to the cup & cover it. Steep to taste. Drink hot or cold.

You could also add the loose mint to a teapot, add boiling water and pour the infusion through a strainer or cheesecloth to keep the leaves out of the cup.

Mulligatawny Soup

Nothing like a great soup when it is cold & rainy or when you need some comfort food. Here's one of my favorites!

Pacifica Del Mar Mulligatawny Soup

peanut oil
2 pounds roasted chicken breast

1/4 cup peanut oil
1 cup carrots, peeled and diced
1 cup celery, diced
1 cup white onion, diced
2 tablespoons curry powder
1 tablespoon basil
1 tablespoon oregano
1/2 tablespoon thyme
2 tablespoons flour
3 tablespoons sugar
2 tablespoons rice vinegar
3 cups chicken stock, medium to strong flavor
1 cup heavy cream
2 green apples, peeled, seeded and diced
1/2 cup brown rice, cooked
salt and ground black pepper to taste
cornstarch if necessary to thicken

FOR CHICKEN: Rub breasts with peanut oil, sprinkle with salt and pepper and bake for 20 minutes at 350F. Let cool and dice. Heat large saucepan and add peanut oil, carrots, celery, onions, curry, basil, oregano and thyme. Saute until vegetables are tender. Add flour and stir until oil is absorbed. Add sugar, vinegar, stock and cream. Lower heat and simmer until roux has cooked out, about 20 minutes. Add chicken, apple, rice and cook an additional 10 minutes. Adjust seasonings

Makes about 8 cups

Then mangled brooch is now in recovery. I worked on the her for a bit. She's smaller as she shrank a bit. She doesn't look as good as she did but she isn't so mangled now. If you happen to put your brooch through the washer & dryer, send it back to me and I'll see what I can do.

In a somber tone, my mother says to me, "I've got some bad news". I braced myself waiting to hear of someone's passing when she handed me one of my felt flower brooches. "I accidently put it in the washer and dryer". There it was shrunken and mangled. Let's see if we can salvage this brooch & bring it back to life a bit.

If you were heading down PCH this morning, you may have noticed that Fairy Mary was adorned yet again! Even though it wasn't as good as her pink skirt and bikini top, you can't help but chuckle a bit over it all. There has been much speculation on why she would be dressed up now and then including claims that homophobia is part of the surfing culture and that it is vandalism and defacing. Could it simply be that they put this dorky statue in an area where it was totally out of place so much so that people couldn't help but poke a little fun at it?

I found some vintage flower cards in an old photo album from the 1860's that my mother in law had. I scanned the images and clean them up quite a bit. I printed the images with archival pigment inks on some really nice acid free blank cards. Nice! You can check them out here!

I was doing some work on the computer when I heard a loud thump. The sound that usually means that some poor bird has crashed into the window. I turned to see what had happened only to see Beavis fleeing the scene. He came around to the door, with this poor little bird in tow, and presented his find as if he were a fierce hunter.

He was upset that he wasn't allowed to bring his little treasure in the house & even more upset when it disappeared. He cried & cried looking for his little friend for at least a whole day. Things are finally back to normal. Beavis just ran for his life, completely spooked by a lint ball.

My family and friends kept asking me to make them something like a headband. They wanted something made out of a material that wasn't too hot to wear on a warm day, something that actually fit snuggly and didn't come undone. They wanted something versatile and in a variety of colors. After much prodding from them, I came up with the Bad Hair Day Sash.

The sash ties so it can be adjusted to fit any size head. I used nice cotton yarns from a local yarn shop not the dish cloth variety. One cotton yarn has a little acrylic & another has a little merino wool which is so soft. They can be worn with the tie in the back or off to the side giving a little bit of a vintage look.

Last weekend was pensive. With a fatal shark attack occurring in the neighborhood just south of us, one can't help contemplating on such a rare event. Those closest to me are in the water daily. It could have been any one of them. Although my heart goes out to the family of Dave Martin, I am grateful that my loved ones are safe.

I began crocheting many many moons ago. I started making hats to keep my boyfriend's noggin warm after surfing. Other people started ordering hats & here I am, years later, still filling orders! You can find a few of my items on my etsy site.
